Aspiring Chefs Enjoy Unique Scholarship Experience in Edinburgh

Fourteen aspiring chefs from colleges and universities across Scotland came together in Edinburgh recently for the Savoy Educational Trust Student Chef Scholarship, a two-day programme designed to inspire, challenge and support the next generation of culinary talent.

Delivered by the Edinburgh Food & Drink Academy (EFDA) and supported by the Savoy Educational Trust, the scholarship gave students the opportunity to learn from industry experts, develop new skills and connect with like-minded peers who share a passion for professional cookery.

The programme was specially created for students nominated by their colleges and universities in recognition of their enthusiasm, potential and commitment to a future career in hospitality.

Across two packed days, participants took part in masterclasses covering patisserie, fish preparation, cooking techniques and contemporary plating. They then stepped into the Academy's teaching kitchens to put their new skills into practice, recreating dishes, preparing lunch and producing eye-catching patisserie showpieces under the guidance of experienced chefs.

Alongside the practical sessions, students enjoyed an overnight stay in Edinburgh and a group dinner, providing the chance to network, share experiences and gain a different perspective on hospitality as guests.

The scholarship forms part of a wider partnership between HIT Scotland and the Savoy Educational Trust, which is focused on creating opportunities for students entering the hospitality industry. Alongside the chef scholarship, a dedicated Customer Experience Scholarship has also been introduced for students interested in front-of-house and guest service careers.

David Cochrane, Chief Executive of HIT Scotland, joined the group during the programme and was impressed by the enthusiasm shown throughout.

He said: "This scholarship perfectly reflects what HIT Scotland aims to achieve through its educational programmes. The students embraced every opportunity to learn, develop new skills and challenge themselves. It was fantastic to see their confidence grow over the two days, and we are extremely grateful to the Savoy Educational Trust for helping us create such a valuable experience for Scotland's future chefs."

For Peter Forbes, an SVQ 2 Professional Cookery student at UHI Inverness, the scholarship was a standout experience.

"Taking part in the scholarship was one of the highlights of my time at college. The chefs were incredibly knowledgeable and I learned techniques that I can take forward into my future career. It gave me a real insight into the standards and creativity required in a professional kitchen."

Derek Graham, who is studying HNC Pastry at City of Glasgow College, particularly enjoyed the opportunity to focus on his passion for patisserie.

"I loved every minute of the experience. From the demonstrations and practical sessions to meeting other student chefs from across Scotland, it was a fantastic opportunity. Creating the patisserie showpiece was a real highlight – it pushed me to develop new skills and gave me a huge sense of achievement.

Sophie Halpin from the Edinburgh Food & Drink Academy praised the students' commitment and attitude throughout the programme.

"The standard of work produced was outstanding, but just as impressive was the students' willingness to learn, ask questions and challenge themselves. They were a credit to their colleges and represent a very bright future for Scotland's hospitality industry."

The success of the scholarship highlights the value of industry-led learning opportunities and reinforces the shared commitment of HIT Scotland and the Savoy Educational Trust to investing in the next generation of hospitality professionals.
